I need a wok! Sticky ginger and lime seafood

I’m on a bit of a Christmas healthy eating/exercise kick. To be honest it’s not proving that difficult, just involves limiting treats and making myself go to the gym, otherwise it’s just adventures in healthy cooking. Now tonight I stayed a little later than usual at work and then went to the gym straight from work. Now this pretty dull tale sets the scene. I came in from work, I needed food. Basically this recipe proves you can make yourself delicious and healthy food within about 15 minutes. All you need is a decent cooking paste. In this case Asda own brand “chosen by you sticky ginger and lime paste”. With a few extra ingredients you can make it taste a bit more delicious and a little bit less like it comes from a jar.
For this recipe you will need:

The seafood of your choice – I defrosted some scallops and some raw peeled prawns

The aforementioned cooking paste or the paste of your choice

A small pepper or half a large pepper

Noodles (I used buckwheat noodles)

Fine green beans, mange tout or sugar snap peas

Lemon juice

Fish sauce

Soy sauce

Some vegetable oil or fry light

 

Chop the pepper and green veg into bitesized pieces. Butterfly cut the prawns – a trick my Dad showed me where you slice them almost in half which makes them cook more consistently. Put these to one side keeping the fish and vegetables separate.

Cook the noodles according to the instructions on the packet.

Drain the noodles and put into your eating vessel of your choice. A bowl is best.

Heat the oil in a wok or large non stick frying pan. Add the vegetables and cook for 2-3 minutes.

 

Add 2-3 tsp of cooking paste, a tsp of the lemon juice, a tsp of soy sauce and a tbsp of fish sauce. Cook for a further minute.

Add the fish and cook for 1-2 minutes or until the fish starts to look opaque. Take immediately off the heat to stop the fish getting chewy.

Enjoy with a nice cold drink or some herbal tea.

Now I must have been feeling extra hungry as my housemate left some free Betty’s cake, namely a treacle tart. Now I did mention healthy eating but I reckon if you’re going to do something bad, do it right. A little treat just makes your day a bit brighter after all.
